Low-Fat Meat Loaf with Spinach (Healthy and Delicious!)

This meatloaf recipe uses quick oats instead of bread crumbs to boost nutritional value without sacrificing taste. Serve with "Mock" mashed potatoes with caramelized onions and sour cream for a healthy twist on an American classic.


Prep Time: 20 minutes

Cook Time: 1 Hour

Yields: 6 servings

Ingredients:

  • 2/3 cup Ketchup
  • 1/8 cup brown sugar
  • 1 tsp prepared mustard
  • 1/4 cup egg substitute (or 2 eggs whites slightly beaten)
  • 2 TBSP Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper
  • ¾ cup quick oats
  • 1 lb extra lean ground beef
  • ¼ cup chopped onion
  • 1 cup chopped fresh spinach

Directions:

  1. Preheat oven to 375 degrees.
  2. In a small bowl, combine the ketchup, brown sugar and mustard. Set aside.
  3. In a large bowl, combine the egg substitute, Worcestershire sauce, garlic powder, salt, pepper, quick oats, ground beef, onion and spinach.
  4. Add ½ cup of ketchup mixture.
  5. Stir thoroughly.
  6. Transfer mixture to a 5 x 9 inch pan. Pour remaining ketchup mixture over top of meat.
  7. Cover with aluminum foil and bake for 45 minutes. Remove foil and continue to bake for another 15 minutes or until internal temperature reaches 170 degrees. Let stand for 5 minutes before slicing.
