When the fist Spanish explorers came to the new world they found Native Americans preserving meats by laying them in the sun. This method was used by many cultures at the time. Of course the problem with this method is that the meat spoils and became infested with maggots. In order to combat this problem, Native Americans would build small smoky fires and place the meat on racks over the fires. The smoke would help with bug problem and help preserve the meat at the same time.

The traditional process of barbequing began to change when Europeans and Africans immigrated into the region of the Southern United States. Pigs and cattle were brought to the new world and this became the main source of meat. Pigs were favored in the South because of the little care that pigs required to thrive. The racks that Native Americans used were replaced with smoke houses and pits.

Slow cooking meat was reserved for poor cuts that were left for slaves and people with low income. Higher quality meats were cooked more slowly and remained juicy and tender. Since there was obviously no way to refrigerate meat at the time, meat would have to be consumed, spiced, or smoked quickly after an animal was slaughtered. Spices usually were made up of large quantities of salt that would dry the meat and lower the chance of contaminants spoiling it. Smoking had the same effect as spicing.

Most burners use tubular hollow steel that are not very efficient. Lynx gas grills use cast burners that hold and radiate a high temperature and are made of brass and is also resistant to corrosion. A lynx gas grill also uses durable ceramic briquettes that are clipped into place. The ceramic briquette coupled with the cast brass burners makes for an incredibly even cooking temperature.



The Heat Stabilizer

When cooking food it is important that you use consistent temperatures. You have to make sure that wind does not disturb the cooking process. Lynx grills come with a special design that deflects wind and allows the grill to stabilize the grill surface temperature.


ProSear

Many grills with infrared searing burners only have two settings – hi or off. The lynx ProSear infrared burner is variable which allows you to sear filet mignon like a restaurant and then throttle it back to cook food like seafood and scallops.


Integrated Illumination

The control knobs are lit from blue LED lights while the ultra-bright internal halogen lights cover the grilling surface. Without these lights it is hard to tell when rare is about to become medium.
