The Meatloaf
I have never been a fan of meatloaf, so when I was given this recipe, I was skeptical. But I soon found out there was no need to be. Just writing this down makes my mouth water. This is another of those recipes that's a little involved. Even though it takes a few steps, it is well worth it. It is a little easier to make than my, "A SMOKED TURKEY THAT WILL MAKE YOU WANT TO "SMACK YO MAMA," recipe.
These measurements are only suggestions, this recipe makes a small loaf. So the measurements can be altered to fit the size of your family size.
MEAT MIXTURE
- 1 lb. ground turkey
- 1 lb. ground chicken
- 2 eggs
- 1 cup bread crumbs
- 1pkg. Onion soup mix
- 1 tsp. salt
- 1 tsp. pepper
- 1 box frozen spinach
- 1/2 cup sour cream
TOPPING
- 1 tbs. Italian Seasoning
- 1 lg. can whole tomatoes
- 1 sm. can tomato sauce
- 1 sm. can tomato paste
- 1 tbs. sugar
- 1 tsp. salt
- 1 tsp. red crush pepper
- 1 tsp. parsley or fresh, sprig
- 1/2 cup bell pepper, chopped
- 1/2 cup onion chopped
- 2 tsp. basil or fresh
The topping can be altered to your taste, and I usually do.
Use two medium bowls to mix turkey and chicken separate. Add half ingredients (except sour cream and spinach), to turkey and chicken: mix well. Mix sour cream & well drained spinach in a small bowl. Spread turkey to a square loaf greased dish, add spinach & sour cream, cover with chicken, finally adding the topping.
Bake in 350 degree (Fahrenheit) preheated oven

What a cool and unique twist on a recipe that's as American as Apple Pie. I've never been a fan of meat loaf as well, but this new twist makes me want to try it out again. I'm bookmarking this one fastfreta. Thanks!

Wow! This sounds good. I am not a lucky meatloaf maker, so will bookmark this page and give it a try. But will use ground turkey-have never seen ground chicken, but hopefully that will work out! Thanks for sharing this recipe.
frogyfish, you're right it is hard to find ground chicken, but when I do I buy enough to freeze for future recipes.
