How many things do you need to know to prepare great espresso?
This is a gradule progression, after drinking coffee for a while, you would want to identify your own blend and learn more about it. After learning about it, you would want to brew it yourself.
At this moment, you would most likely be getting an espresso coffee machine (regular coffee makers just does not afford much learning medium). And from there, you would want to brew the best coffee.

If you asked me to sum it up, I would say that other than the machines, three factors would make or break your espresso:
The Pressure
I guess this is almost a no brainer, even for those that are just espresso drinkers would know that pressure is critical to espresso extraction.
And a good coffee extraction pressure is the reason why machines are priced more. Usually steam driven machines which cannot attain a pressure of more than 10 bars can be found for less than a hundred dollars.
Those that are pump driven would cost more than $200 and can attain an extraction pressure of at least 12 bars. And 12 bar of pressure is the number in order to get a good extraction.
The water
While, most folks knows about having good pressure would ensure good espresso, not many people know that water plays a part in delivering good espresso too.
The fact is, if you want great espresso, you have to use filter water or what is commonly known as soft water and that is not the tap water from our house.
The water that is from our house because it can be consumed as it is, contains many minerals and chemicals to keep it safe. And these chemicals and minerals are things which would alter the taste of your espresso.
Other than giving your coffee a strange taste, over the long run it would break down your boiler and your filter basket.
The conditions
Now, if soft water is something that coffee lovers do not know, then the conditions of the machine is something coffee lovers do not want to know!
This is a very basic understanding. If the machine is clean, it would work better and delivers better product. Espresso coffee machine that is not well maintained would give you foul tasting coffee. This is due to rancid oil being stuck inside the machine or spend coffee stuck in the sprout.
