Make your meat taste great; Recipes for marinades, rubs and sauces
75South-western Meat rub
This is what you would call a wet rub and goes great on beef steaks, pork and even chicken
You will need:
1 large clove garlic, finely chopped
1 tablespoon chilli powder
1 tablespoon vegetable oil
1 teaspoon ground cumin
¼ teaspoon salt
¼ teaspoon ground red pepper(cayenne)
In small bowl mix all ingredients.
Spread run evenly over 1 pound of boneless meat, let marinate for 30-60 minutes
(optional) grill meat or cook as desired.
Lemon Herb Marinade
This marinade is great for fish and chicken.
You will need:
1/3 up olive oil or vegetable oil
¼ cup lemon juice
1 tablespoon fresh chopped or 1 teaspoon of dried basil leaves
2 teaspoons chopped or ½ teaspoon dries thyme leaves
¼ teaspoon salt, ¼ teaspoon pepper
2 cloves finely chopped garlic
In glass bowl mix all ingredients, add about 1 pound of fish, 1 pound of boneless chicken or 3 ½ pounds of chicken bone in. Coat fish or chicken, cover bowl with plastic wrap refrigerate at least 30 minutes up to 24 hours for best results.
Remove from marinade, grill or cook meat brush on marinade as it cooks. Heat remaining sauce to a boil and serve as a sauce with meat or side dish if desired.
Home made BBQ Sauce, Ranch- country Style
This BBQ sauce is so good you’ll be spreading over everything. Goes great on burgers and steaks.
You will Need:
4 cups of ketchup
1 cup chilli sauce
¼ cup brown sugar
¼ cup each- vegetable oil, water, vinegar and lemon juice
2 tablespoons hickory liquid smoke
1 lemon, VERY thinly sliced
1 large onion, VERY thinly sliced
1 teaspoon each- salt, dry mustard and paprika
In large saucepan mix all ingredients, bring to a boil stirring often to prevent scorching. Partially cover and boil for 4 minutes. Let cool in fridge, keep refrigerated, use as needed for up to 2 weeks. Brush on your favourite grilled meats…
Peanut Sauce
Try this over beef kabobs, or grilled chicken. Kids love this recipe so try it on their favourite BBQ meats.
You will Need:
1 cup pineapple juice
1 cup peanut butter
½ teaspoon garlic powder
½ teaspoon onion powder
2 tablespoons sweet chilli sauce
¼ cup soy sauce
Combine all ingredients in saucepan stir over med heat for 5 minutes or until smooth, serve warm over your cooked meats.
Oriental style marinade
I love the flavours that come from the orient, sweet and spice. Try this great marinate is great for lamb, but works just as well with other meats such as chicken, beef and pork.
You will need:
1 clove garlic, crushed
1 teaspoon grated fresh ginger
1 small onion, peeled and coarsely chopped
1 tablespoon fresh curry leaves…. NOTE* if you can not find them substitute with fresh
Oregano or marjoram leaves
¼ teaspoon ground turmeric
1 tablespoon lemon juice
1 tablespoon water
1 teaspoon oriental sesame oil
Combine all ingredients in a blender, blend until smooth. Pour marinade over meat, mix and allow to marinate for at least 30 minutes, longer for more flavour. Cook meat as desired.
