I love cookies. There is nothing quite so nice as warm, fresh, home baked cookies, especially if the recipe is quick and easy. I have a number of recipes I enjoy using, including an awesome vegan chocolate chip, as well as the easiest peanut butter cookie recipe...ever.

Pssst: Peanut Butter Cookie Recipe

1 cup peanut butter 1 cup sugar 1 egg 1 tsp vanilla

Mix it all together until it forms a stiff dough. Spoon onto cookie sheet, bake at 350 until golden around the edges..approx. 8 -10 minutes.

There was one time, though, when I was around ten years old and visiting my cousins in Delaware that they surprised me with what they called Cake Cookies. What was great was it was something we could make and didn't have to have an adult around to help us...although my aunt was in the next room.

It's a simple recipe really. Any cake mix, 1/2 cup of margarine or butter, and an egg. Combine all ingredients until moistened, drop by spoonfuls onto cookie sheet and bake at 350 degrees for 8 -10 minutes. Hint: If you want chocolate chip cookies, you can add a cup of chocolate chips to a yellow or white cake mix.

I have since tried making "cake cookies" over the years and find them to be easy and delicious. The cookies are light and delicate, although a little more "cake-like" in texture, and I'm always pleased with the result. If you keep cake mix in your cupboard, it's a fun and easy way to make cookies with a minimum amount of effort...not to mention a great activity to do with little ones.
