Mediterranean potatoes

Out here it has been windy, rainy and gray, which is usually the case during winter and spring--and sometimes all year around! Enough said, Let's prepare a comfy food dish that will bring a ray of sun shine to our plates and soul: my mediterranean potatoes.

Get some potatoes, a red pepper, some herbes de provence, garlic, olive oil and butter-salt'n peppa.

Clean your potatoes, leave the skin on and dice them. Put a little chunk of butter in your pan, as it melts on medium to high heat, add some olive olive, pour in the diced potatoes, a few garlic cloves and the red pepper, which you have previously cut in two pieces. I recommend you remove the seeds. Top it with the herbes de Provence and salt, then put a lid on. Check regularly and stir it. Lower the heat to medium-low and let it cook for 30mn or so.

Now that will bring a smile to your face! You can serve it with a side dish of lettuce and a piece of meat. Enjoy and stay warm!
