Easy mexican recipe

This is another recipe I have been making for years. You can serve it alone as an entree, or serve it with Mexican rice on the side. Total this recipe should cost about $13.00 for 3-4 servings.


Ingredients

  • 1 lb. ground beef
  • 1 can red kidney beans
  • 1/2 red onion
  • 8 - 16 ounces shredding chedder or mexican blend cheese
  • 1 can diced tomato - do not drain (with chilies added optional)
  • 1 small can of tomato paste
  • 1 packet of "Taco" seasoning or Cumin & Chili Powder to taste
  • 6 - 8 small yellow or white corn tortillas
  • 1 small container of sour cream
  • Optional - small container of guacamole or 1 sliced avocado



Preparation

  1. Grate cheese, chop onion finely & drain/wash kidney beans
  2. Brown ground beef in a skillet along with chopped onions
  3. Add kidney beans to the skillet and cook for another 5 minutes
  4. Add taco seasoning, tomato paste and diced tomato & mix into meat
  5. Set meat & bean mixture aside
  6. Microwave, or fry 2 tortillas until they are soft, about 30 seconds total
  7. On a plate, stack ingredients as follows:
  • 1 tortilla on bottom, then sprinkle a little cheese on it
  • Add 1 scoop of meat mixture, and spread it evenly on tortilla
  • Sprinkle more cheese on top of meat
  • Add another tortilla
  • Sprinkle cheese on the tortilla
  • Add 1 scoop of meat mixture, and spread it evenly on tortilla
  • Sprinkle more cheese, add 2 tablespoons of sour cream or guacamole

Substitutes:

  • Black beans instead of Red Kidney beans (or use both!)
  • Add corn, jalapenos or chilies

  • Lite sour cream for regular sour cream
  • You can use the onions raw as another layer on top of the meat mixture
  • You can also add shredded lettuce in between the layers, but if you do this make sure the meat has cooled for 5 - 10 minutes so the lettuce does not wilt
  • You can also use different cheeses that are more spicy like Pepper Jack, or more traditional mexican cheeses like Cojita

Serving size

For this recipe, a serving size should be 2 tortillas per person with ingredients added as listed. Overall, this recipe should contain less than 60 carbs per serving.
