Ingredients :

  • 2 small hot chili peppers, seeded
  • 1 sweet red pepper
  • 1 small onion
  • 1 pound lean beef or turkey, ground
  • ½ cup yellow cornmeal
  • 1 egg or ¼ cup egg substitute, slightly beaten
  • 2 tbsp fresh parsley, minced
  • 1 tbsp tomato paste
  • ¼ tsp ground cumin
  • 1/8 tsp freshly ground black pepper
  • 4 tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 cups tomato sauce
  • 1 ½ cups corn
  • 2 tbsp fresh coriander, minced (optional)
  • ¼ tsp dried hot red pepper flakes, crushed

Procedure :

  1. In a bowl , combine beef, cornmeal, egg, parsley, tomato paste, cumin, and black pepper, set aside.
  2. Place chili peppers, red pepper, onion, tomatoes, and garlic in large skillet. Cover; cook over medium heat until it boils, reduce heat to low and cook 10 minutes. Stir in tomato sauce.
  3. Form beef mixture into 16 meatballs, place in tomato-vegetable sauce in skillet. Cover; cook over medium heat, until it boils, reduce heat to low and cook for 25 minutes. Add corn, cook 5 minutes more.
  4. Stir in fresh coriander, red pepper flakes. Serve with rice and green salad.

Makes 8 servings.
