Mexican Meatballs

Ingredients :
- 2 small hot chili peppers, seeded
- 1 sweet red pepper
- 1 small onion
- 1 pound lean beef or turkey, ground
- ½ cup yellow cornmeal
- 1 egg or ¼ cup egg substitute, slightly beaten
- 2 tbsp fresh parsley, minced
- 1 tbsp tomato paste
- ¼ tsp ground cumin
- 1/8 tsp freshly ground black pepper
- 4 tomatoes, chopped
- 3 cloves garlic, minced
- 2 cups tomato sauce
- 1 ½ cups corn
- 2 tbsp fresh coriander, minced (optional)
- ¼ tsp dried hot red pepper flakes, crushed
Procedure :
- In a bowl , combine beef, cornmeal, egg, parsley, tomato paste, cumin, and black pepper, set aside.
- Place chili peppers, red pepper, onion, tomatoes, and garlic in large skillet. Cover; cook over medium heat until it boils, reduce heat to low and cook 10 minutes. Stir in tomato sauce.
- Form beef mixture into 16 meatballs, place in tomato-vegetable sauce in skillet. Cover; cook over medium heat, until it boils, reduce heat to low and cook for 25 minutes. Add corn, cook 5 minutes more.
- Stir in fresh coriander, red pepper flakes. Serve with rice and green salad.
Makes 8 servings.
