Mexican Tortilla Pizza

If you like pizza and you like Mexican food, a delicious combination of the two is the Mexican Tortilla Pizza. The Mexican Tortilla Pizza makes a delicious lunch, nice dinner to serve with avocado salad, or big snack for the kids.
The pizza is easy to make and you can interchange ingredients to create a multitude of variations. I have also included the recipe for Avocado Tomato Salad and a Peachy Margarita on the rocks.
Hot Jalapenos
Mexican Tortilla Pizza
Ingredients:
- 1 can (10 ounces) chunk white chicken in water (drained)
- 1 can (14 ounces) diced tomatoes and green chiles
- 1/2 teaspoon garlic powder
- 1 can refried beans
- 1 tablespoon butter
- 4 six-inch flour tortillas
- 1/2 cup Monterrey Jack cheese (shredded)
- 1/2 cup cheddar cheese (shredded)
- black olives (sliced)
- jalapeno peppers (sliced)
Directions:
Preheat oven to broil.
Combine chicken, tomatoes and green chiles and garlic powder in a small bowl.
Mix well and set to the side.
In a small saucepan, combine beans with 1 tablespoon butter.
Heat on medium until hot, stirring occassionally.
Cover baking sheet with aluminum foil.
Place tortillas on baking sheet.
Broil tortillas one minute per side until crisp.
Remove tortillas from oven.
Decrease oven temperature to 350 degrees F.
Spread bean mixture on each tortilla
Spoon chicken on top of beans.
Top with both kinds of cheese.
Garnish with black olives and jalapenos, if desired.
Bake five minutes or until cheese is melted.
Serve with salsa.
Change It Up
The Variations:
- Substitute ground beef or shredded beef, instead of chicken.
- Use a light coat of salsa as your pizza sauce.
- Use whole wheat tortillas, low-fat cheese and no butter for a healthier variation.
- For a vegetarian version, substitute vegetables such as onions and bell peppers for chicken or beef.
Avocado Tomato Salad
Ingredients:
- 4 tomatoes (chopped)
- 3 avocados (peeled, pitted and diced)
- 1 white onion (diced)
- Vinaigrette salad dressing
Directions:
Combine together tomatoes, avocados and onion in a large bowl.
Sprinkle with salt and black pepper.
Pour 8 ounces of salad dressing over mixture.
Cover and chill two hours.
Toss and serve.
Peachy Margarita
Ingredients:
- 2 ounces tequila
- 2 ounces peach schnapps
- 2 ounces sweet and sour mix
- 1 dash grenadine syrup for color
Directions:
Chill two margarita glasses.
Pour 1 ounce each of tequila, peach schnapps and sweet and sour over ice in each glass.
Add grenadine a dash of grenadine.
Stir gently.
Serves two.
