The cheese is key!

Onion and bell pepper add zip!

Chop them finer than this.

Why Is It Called More Casserole?

This recipe is from my mother-in-law who said it was called More Casserole because you always wanted more!

2 pounds hamburger

1 large onion, chopped

1/2 bell pepper, chopped

2 cloves garlic, minced

salt and pepper to taste

2 teaspoons sugar

2 teaspoons chili powder (or more to taste)

1 large can tomato sauce

1 1/2 - 2 cups corn (canned or frozen)

1 1/2 - 2 cups frozen peas

1 large can pitted olives

1 can mushrooms, drained

1 pound elbow  macaroni, cooked and drained

3 cups grated cheddar cheese

Fry hamburger, add chopped onion and bell pepper, and garlic.  Season with salt and pepper.  Drain fat.  Add sugar, chili powder, tomato sauce, corn, peas, olives, mushrooms.  Mix in about 1 cup of the cheese.  Pour into a greased casserole dish (I use a greased 9 X 13 X 3 aluminum pan for this, but any casserole dish will work) and top with the remaining cheese.  Heat in a 350 F oven until bubbly.

This goes so well - for taste and color -  with a green salad with vinaigrette dressing.

I'll definately try this recipe. I'm so busy during the day that a casserole is the perfect meal idea. I usually put it all together and put it in the fridge, than when I come home I put it in the oven. Thanks for the recipe.
