Hi, I'm Patty and my little boy is allergic to eggs and nuts. His brother can't eat soy, so? This means that the typical egg substitutions won't work for our family.
However, my husband, discovered that yes, you can make egg-free pancakes and no-one will be the wiser.
We use Bisquick Mix. Just prepare the 'usual' pancake recipee, eliminating the eggs and increasing the milk by about 1/4 cup per recipe. Go ahead and flip and serve, you will be saving your family from extra choloesterol, and they honestly taste EXACTLY the same as pancakes with eggs.
To make them fun, having a large family with 6 kids and lots of different 'taste-preferances', rather than mixing in added ingredients, I make a 'pancake topping buffet' on our large breakfast table. Some of our favorite optional toppings,
egg-free, peanut-free/tree-nut free, and soy-free include:
chopped fresh apples
sliced bananas
freshly sliced strawberries
blueberries
Chocolate chips (we use America's Choice chocolate chips, bought at our local A&P food store which do not contain nut contaminants as do Toll House and other name brands)
Sprinkles (check for ingredients)
and of course, what would a pancake be without
Anut Jemima's Maple Syrup???
