Cranberry Corn Muffins

Ingredients

  • 1 cup unbleached flour
  • 3/4 cup cornmeal
  • 1/3 cup sugar
  • 2 tsp baking powder
  • 1 egg white, whipped
  • 1/4 cup fat-free sour cream
  • 1/2 tsp lemon zest
  • 1 cup chopped cranberries

Plus:

  • 2 tsp vinegar
  • enough skim milk to equal 3/4 cup

Instructions

Preheat oven to 350 F. Mix vinegar and milk, let stand 5 minutes. Combine dry ingredients in one bowl, wet ingredients in another. Add milk mixture and cranberries to wet ingredients, blend well. Combine wet and dry ingredients. Spray or line muffin tin, fill each cup 2/3 full. Bake 20 minutes or until golden.

Makes 12 muffins.


Carrot Cake Muffins

Ingredients

  • 1 3/4 cup rolled oats
  • 1 cup unbleached flour
  • 1/2 cup sugar
  • 1 Tbsp baking powder
  • 1/4 tsp nutmeg
  • 1-1/3 cups carrots, grated
  • 1 cup zucchini, grated
  • 2/3 cup skim milk
  • 3 tablespoons fat-free sour cream
  • 2 egg whites, beaten
  • 1/2 cup raisins (optional)

Instructions

Preheat oven to 350 F. Mix together oats, flour, sugar, baking powder, and nutmeg in one bowl. In a separate container, combine carrots, zucchini, milk, sour cream, and egg whites. Stir wet and dry ingredients just until moistened. Add raisins, if desired. Fill prepared muffin cups almost to the top with batter. Bake 20-25 minutes, or until golden.

Makes 12 muffins.

  • 3/4 cup fat free yogurt
  • 1/4 cup unsweetened applesauce
  • 2 egg whites
  • 3/4 cup apple, peeled and grated

Cinnamon-Apple Bran Muffins

Ingredients

  • 1 1/4 cup whole wheat flour
  • 1 cup oat bran
  • 1/3 cup packed brown sugar
  • 2 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Instructions

Preheat oven to 375 F. Mix all dry ingredients and wet ingredients separately, stir together until moistened. Add apple, fold in. Line muffin tin with cupcake papers or spray with non-stick spray. Scoop 1/4 of batter into each cup. Bake 18-20 minutes.

Makes 12 muffins.


Banana Spice Muffins

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup white sugar
  • 1/2 cup fat free cottage cheese
  • 4 egg whites
  • 3/4 cup mashed bananas
  • 1/4 cup brewed nonfat chai

Instructions

Preheat oven to 350 F. Stir flour, salt, and baking powder together. In a separate bowl, mix sugar, cottage cheese, and egg whites, then add bananas and chai. Add flour mixture to wet ingredients and blend until smooth. Divide evenly among 12 lined or sprayed muffin cups. Bake 20 minutes or until toothpick inserted in the middle of a muffin comes out clean.

Makes 12 muffins.


Pumpkin Muffins

Ingredients

  • 1 cup canned cooked pumpkin
  • 1 cup bran cereal, crushed
  • 3/4 cup skim milk
  • 1/3 cup corn syrup
  • 1 tsp vanilla
  • 2 egg whites, slightly beaten
  • 1 1/4 cups all purpose flour
  • 1/3 cup sugar
  • 2 tsp baking powder
  • 2 tsp pumpkin pie spice

Instructions

Preheat oven to 400 F. Mix wet ingredients and dry ingredients separately. Combine. Spoon into prepared muffin tin, filling each cup 2/3 full. Bake 20 minutes or until toothpick inserted in center of muffin comes out clean.

Makes 12 muffins.

I made the Banana Spice muffins today. Though the texture isn't quite the same as a regular muffin, the taste is great. I used Chai tea, I think next time I'd also add a bit of cinnamon.
