Egg plant Parmesan Recipe

Hi Gardening Friends

Here is my mother's Jean Eggplant Parmesan Recipe.

EGGPLANT PARMESAN RECIPE

First peel the skin off the eggplant.

Then slice the eggplant.

But don't cut the eggplant to thick.

Put a little flour on the eggplant.

Then dip the eggplant slices into an egg batter.

Then fry the eggplant in a skillet.

Put a layer of Marinara sauce in the pan.

Parmesan or Romano Cheese on top of the eggplant.

Now put more sauce on top of the eggplant.

Now repeat process.

Keep layering.

Cook for 45 minutes in oven.
