Its very important that you soak your kidney beans ( Red Beans ) over night in salted water before you cook them the next day. Once your kidney beans have soaked over night wash them off and proceed with your red beans and rice recipe.
For your New Orleans Style Red Beans And Rice you will need.
1. Two Tablespoons Vegetable Oil.
2. One Cup Fine Diced Celery.
3. One Cup Fine Diced Onion.
4. One Cup Fine Diced Green Bell Pepper.
5. One Teaspoon Salt.
6. One Teaspoon Ground Cayenne Pepper.
7. One Teaspoon Dried Ground Thyme.
8. One Pound Boiled Ham Cut Into One Inch Cubes.
9. One Pound Smoked Sausage Sliced Into Thin Slices , you will want to place your sausage slices into a skillet with vegetable oil and brown before you add it to your stock pot where your red beans are cooking.
10. Two Tablespoons Minced Fresh Garlic.
11. One Teaspoon Black Pepper.
12. One Pound Dry Kidney Beans that you have soaked over night and then drained well.
Saute your onion , bell peppers , and celery in the vegetable oil until tender and done. Now add all your ingredients to a large stock pot and cover your beans with water. You want your water to be a couple of inches above your beans. Bring to a boil and reduce the heat to medium. Cook your beans until the beans are done and the bean soup is thick. Add only as much water as you need to while your beans are cooking. After your beans are done you may need to stay close and turn them up a bit to cook some of the water out of your beans and thicken them. Serve your red beans over hot buttered white rice. And you have now made delicious New Orleans Style Red Beans And Rice.Garnish your Red Beans and Rice with finely chopped green onions including the tops.
