Oatmeal, Whole Wheat and Nut Waffles


This author had oatmeal pancakes a few years ago and ever since, I've been a huge fan of anything made with oats and nuts when it comes to pancakes and waffles.

I recently stumbled on a recipe in Taste of Home, which I normally don't really like to use because as delicious as some of the recipes are, they use a lot of fat and a lot of sugar it seems.

However, this recipe with a little revamping, turned out to be a favorite and one I will use in the future with my tweaks.

I substituted unbleached flour for the all-purpose that the recipe called for. I also substituted stone ground whole wheat flour for the wheat flour.

Measuring out the instant cereal to be exactly 1/3 cup per package, in the future, I will use old fashioned rolled oats and dried apples or pears with some cinnamon; perhaps even some cinnamon chips.

I also substituted almond milk for most of the 2% milk the recipe called for which further enhanced the nutty flavor of the waffles.

Pecans though a favorite nut at our house didn't seem like quite the right nut for this recipe so I went with thinly sliced almonds instead.

Lastly, even though we buy pure maple syrup, I'm not a huge fan of anything I've tried to make more nutritious swimming in sugar. I happened to have some gorgeous fat and juicy organic apples on hand so while I was making the waffles, it took no time whatsoever to chunk up the apples (skin on since they were organic) and make some homemade applesauce to top them off.

Ingredients for Oat and Nut Whole Wheat Waffles

  • 1 cup unbleached flour
  • 1/2 cup stone ground whole wheat flour
  • 2 packets instant (1/3 cup each) apple cinnamon oatmeal, * substitute rolled oats and dried fruits, 2/3 cup total
  • 1 tablespoon baking powder, * aluminum free
  • 1 teaspoon ground cinnamon
  • Dash kosher salt
  • 1-1/2 cups total combination low fat almond milk and nonfat milk, * substitute either/or
  • 2 eggs beaten, * substitute 1/2 cup egg substitute or 1 egg and 2 egg whites
  • 1/3 cup unsalted butter melted, * substitute margarine/butter substitute
  • 1/2 cup chopped or slivered almonds, * substitute other nuts
  • 1/4 teaspoon Mexican vanilla, *optional
  • 1 medium organic peel-on apple, * 1 per 2 servings
  • 1/2 teaspoon ground cinnamon
  • pure maple syrup, * substitute homemade applesauce

Instructions for Oat Whole Wheat Nut Waffles

  1. Place in a large bowl 1 cup of unbleached flour, 1/2 cup whole wheat flour, baking powder, ground cinnamon, salt and 2 packages of instant oatmeal. Whisk to combine.
  2. Plug in waffle maker and allow to heat up. Follow manufacturer's directions.
  3. If making applesauce, wash apples, core and cut into chunks. If not using organic apples, peel and then chunk. Place in a pan large enough for how many servings you are making and add a tiny bit of water and a dash of kosher salt. Place on stove, bring to a boil. Reduce heat and cover with a lid. Cook gently for 5 minutes, check, and continue cooking until desired firmness. Leave as is or mash slightly. Keep warm.
  4. In a large measuring cup, combine milk combination, 2 beaten eggs or egg substitute. Whisk to combine. Add melted butter or margine, whisk again to combine.
  5. Add chopped almonds to dry ingredients in bowl. Whisk to combine.
  6. Pour liquid ingredients into dry ingredients and gently stir to combine.
  7. Making sure waffle maker is ready, open and add 2/3 cup (or how much is appropriate for your waffle maker) to waffle grid. Smooth out to cover. Close lid and cook until light goes out indicating the waffle is ready.
  8. Remove from waffle maker and stack on a warmed plate. Keep warm in a 200 degree oven while making the other waffles.
  9. Note: If you like crispier waffles, let them cook in the waffle maker for a few more minutes than recommended.

Step 2: Add oatmeal to other dry ingredients--flours, baking powder, cinnamon and salt. Whisk well and set aside. Turn on waffle maker and treat according to manufacturer's directions.

Step 3: Combine liquid ingredients of milks, 2 beaten eggs or egg substitute, vanilla and lastly add in cooled melted butter. Stir or whisk well to combine.

Step 4: Sprinkle sliced or chopped nuts on top of the dry ingredients and stir gently to combine.

Step 5: Pour liquid ingredient combination slowly into the bowl with the dry ingredients. Mix to combine but do not overmix.

Step 6: Ladle by 1/3 cupfuls into waffle maker. My waffle maker took 2/3 cup per waffle and were just the right size. Close lid and let cook.

Step 7: If you like crispier waffles, let them go a few more minutes after the "done" light has gone out on your waffle maker. Remove waffle to a warm plate and place in a warm oven at 200 degrees if desired to keep warm while the rest are baking.

Step 8: (optional) Wash, core and chunk organic apples into an appropriate sized pan depending on how many servings you make. Leave skin on if organic. Add just a tiny bit of water and turn heat up to boil, then reduce, cover with a lid. Check apples every 5 minutes as they cook quickly.

Step 9: (optional) Sprinkle with a bit of cinnamon or other spices and cook covered until just fork tender. Leave chunky or mash slightly depending on preference. Turn off heat, keep lid on pan to warm until serving time.

  • Watch the video below for an oat flour waffle recipe--you can make your own oat flour by simply spinning rolled oats (the less refined the better) in your food processor or blender until it's the consistency of flour. It's as simple as that!
  • Substitute different kinds of nuts for the almonds
  • Try a dash of almond extract instead of vanilla
  • Use different kinds of milk to substitute for the almond milk if that isn't your favorite flavor
  • Instead of applesauce or maple syrup, top your waffles with a dollop of fresh whipped cream and fresh fruit in season

Note that these waffles are very crispy. They can be easily popped into the toaster for re-crisping.

They are also wonderful right out of the freezer--pop into the toaster and they are as good as freshly made. They freeze extremely well for up to 6 months.
