I'm delighted to share a sampling of our favorite organic recipes with you here. We've been eating organic food for many years, fruits and vegetables that we grow ourselves or purchase from local organic farmers, organic beef, poultry and pork, as well as wild fish and game. We feel that it simply tastes much better, it's healthier for the enviroment and us too.


Why Buy Organic Food?

Have you noticed that organic foods are becoming more popular and it's easier to find at your local grocery stores? If you are already a fan of organic you are probably thrilled. If you don't know a lot about organic food you may not realize what all the fuss is about. Here's some information that will hopefully help you make the healthy switch to organics.

  • When you choose certified organic food, you know exactly how the food was grown, processed, and that all the ingredients contained are natural and virtually free of harmful chemicals.

  • Organic beef and dairy products are not produced with hormones.
  • Organic produce is thought to contain more vitamins and nutrients than traditionally grown plants.

The most important benefit of eating organic food is that it's grown free of pesticides, herbicides, fungicides, unnatural fertilizers, hormones and other potentially harmful chemicals. These chemicals can buildup in your body and can have more toxic affects on your children.

A few short years ago, you probably had to drive all over town just to get a few organic vegetables. Now you cannot only find organic fruits and vegetables at your grocery stores, but also organic meats, dairy products, grains, pastas, and even herbs. If you shop around, you may also be able to find these products at reasonable prices as well. This also means that there is no excuse to put off eating healthier organic foods today.

Organic Chicken And Pasta

This is a quick, easy to prepare low fat main course. I like to prepare it with fresh tomatoes when they're in season, see the tip below for peeling them. Keep in mind that pretty much any recipe can be converted to organic by simply substituting organic ingredients.

Ingredients:

18 oz. organic chicken breast, diced into 1/2" square pieces

1/2 c. organic onion, diced

2 cloves organic garlic, minced

2 cans (14.5 oz.) of diced organic tomatoes, or 4 cups of peeled, diced fresh organic tomatoes

1/3 c. organic balsamic vinegar

1 tsp. Watkins organic basil

1 tsp. Watkins organic oregano

1/2 tsp. Watkins organic thyme

1/2 tsp. Watkins organic rosemary

1/4 c. organic tomato paste

Watkins cooking spray

3 1/3 c. cooked organic pasta of your choice, we like whole wheat

Cooking Instructions: Spray a large skillet with nonstick cooking spray. Saute onion, and garlic for approximately 5 minutes over low heat. Add raw chicken pieces. Cook chicken over medium high heat until no longer pink. Once chicken is cooked, add tomatoes, paste, balsamic vinegar, and spices to the mixture and simmer over medium low heat for 20 minutes.

Serve over hot cooked pasta, with a side of garlic bread and your favorite organic green salad.

Tip: If using fresh tomatoes you can easily peel them by blanching them; place them in a pot of boiling water for a few minutes then place in cold water to cool. The skin will slide right off.

Why Eat Organic Food?

Organic Apple Sauce

It's the season for organic apples so here's an easy recipe for apple sauce. Since organic apples haven't been sprayed with pesticides and chemicals they might have worm holes and even a fat, healthy resident inside. The worm is very likley a coddling moth larva and it won't hurt you, simply cut that part away. (I usually murder any I find.) Having a worm hole also mean the apples won't keep very long so making sauce is a great way to use them up before they spoil.

Peel, quarter and core as many apples as you like. Place them in a heavy bottomed saucepan along with a small amount of water, just enough to cover the bottom of the pan, turn heat to medium high, and cover pan with a tight fitting lid. When mixture starts to boil, stir mixture and turn the heat down to low and cook until apples have turned to sauce. Remove from heat, cool and refrigerate until serving time.

A bowl of apple sauce makes a great breakfast, dessert or snack as is or you can serve it with granola, with sprinkle of organic cinnamon or use it in baked goods. If you prefer a sweetened version you can add honey or sugar to taste just before it's done cooking.

Tip: Apple sauce freezes well so you can make a big batch and freeze some for later. I prefer to can it in pint jars but that is an entirely new subject.

    This is a delicious and healthy granola recipe that can be enjoyed for breakfast with fresh fruit and yogurt or for a treat any time of the day! Sprinkle on fresh fruit, microwave for a few minutes to have instant fruit crisp. Combine wet with the dry ingredients and mix well. Spray two baking sheets with Watkins cooking spray and spread the granola mixture on the pans. Squeeze or pat together to make small clumps. Bake in the preheated oven for about 30 minutes or until the granola mix is nice and golden. Stir occasionally to ensure even baking. Add raisins, stir again and bake for an extra 5 minutes.
