Quick'Un-fried Chicken
Ingredients
- 6 pieces skinless chicken
- 1 cup coarsely crushed corn flake cereal
- 1 Tbsp all-purpose flour
- 1 egg white
- 1 tsp water
- 1 tsp salt
- pepper to taste
Instructions
Preheat oven to 400 F. Spray cookie sheet with zero-calorie non-stick cooking spray. Combine dry ingredients (salt, pepper, flour, corn flakes) in shallow dish. Beat egg white lightly in pie plate. Dip chicken pieces into egg, then into flour mixture to coat. Place on cookie sheet, spray tops with cooking spray. Bake 40 minutes or until chicken turns golden brown.

Spiced-Up Oven-Fried Chicken
Ingredients
- 6-8 pieces boneless skinless chicken
- 1/2 cup skim milk
- 1 tsp poultry seasoning
- 1 cup seasoned bread crumbs
- 1 1/2 Tbsp onion powder
- 1 1/2 Tbsp garlic powder
- 2 tsp ground black pepper
- 2 tsp ground red pepper
- 1 tsp ground ginger
Instructions
Two and a half hours before meal time: Mix 1/2 of poultry seasoning into milk, combine all other dry ingredients in large ziploc bag. Dip chicken into milk, shake off excess, add to ingredients in bag, shake to coat. Refrigerate one hour.
One and a half hours before meal time: Preheat oven to 350 F. Spray baking dish with non-stick spray. Evenly space chicken in dish. Cover with aluminum foil, bake 40 minutes. Remove foil, bake additional 30 minutes or until meat comes easily off the bone.
Breaded Chicken Parmesan
Ingredients
- 4-6 boneless skinless pieces chicken breast
- 1-2 Tbsp unsweetened applesauce
- 1/3 cup low-fat biscuit mix
- 1/4 cup grated Parmesan cheese
- 1 tsp oregano
- 1 tsp basil
- 1/4 tsp rosemary
- 1/2 tsp dried parsley
- 1/2 tsp garlic powder
- 1 teaspoon salt
- 1/4 teaspoon pepper
Instructions
Preheat oven to 425 F. Combine biscuit mix and all dry ingredients with enough applesauce to create a thick batter. Coat chicken pieces, place in sprayed 13 x 9 baking dish. Bake 20-25 minutes, until browned and juices run clear.
