Oxtail Stew

Ingredients :

  • 700 g oxtail, cleaned and cut into small pieces
  • 1 head garlic, crushed
  • 2 medium onions, chopped (1/2 cup)
  • 1 medium carrot, sliced
  • 1 stalk celery, sliced
  • 1 medium red bell pepper, cut into cubes
  • 1 laurel leaf
  • 1 can (227 g) tomato sauce

Procedure :

  1. Boil oxtail in 2-3 cups water until tender (if in pressure cooker boil for 1 hour) Drain and reserve 1 ½ cups broth.
  2. Saute garlic, onions, oxtail and carrots in oil. Season with salt, pepper and sugar to taste. Simmer for 20 minutes.
  3. Add the rest of the ingredients. Simmer for 10 minutes, or until cooked.

Makes 8 servings.
