Oxtail Stew
Ingredients :
- 700 g oxtail, cleaned and cut into small pieces
- 1 head garlic, crushed
- 2 medium onions, chopped (1/2 cup)
- 1 medium carrot, sliced
- 1 stalk celery, sliced
- 1 medium red bell pepper, cut into cubes
- 1 laurel leaf
- 1 can (227 g) tomato sauce
Procedure :
- Boil oxtail in 2-3 cups water until tender (if in pressure cooker boil for 1 hour) Drain and reserve 1 ½ cups broth.
- Saute garlic, onions, oxtail and carrots in oil. Season with salt, pepper and sugar to taste. Simmer for 20 minutes.
- Add the rest of the ingredients. Simmer for 10 minutes, or until cooked.
Makes 8 servings.
