A few years ago our church put together several favorite homecoming, picnic, family reunion types of recipes. This delicious chicken salad recipe by (Essie M. Holt) is a favorite Picnic Chicken Salad. I thought the readers to this hub my find enjoyable.
What it Takes
- c. mayonnaise or salad dressing
- 1/2 tsp. lemon juice
- 1/2 Tbsp. diced pimiento (if desired)
- 1/4 tsp. pepper
- 1 tsp. salt
- 1 1/2 c. cooked rice
- 1 1/2 c. cooked or canned peas
- 1 1/2 c. cooked chicken, cut in small pieces
- 1 1/2 c. finely diced celery
PICNIC CHICKEN SALAD – What To Do!
Mix together mayonnaise, lemon juice, pimento and seasonings. Add remaining ingredients and toss all together lightly. Let stand cold place 10 to 15 minutes before serving. Serve in lettuce cups. Garnish with tomato wedges. Makes 8 to 10 servings. (recipe by Essie M. Holt )
