Parfait Delights
59Want a quick and healthy desert that can double as a snack anytime? No cooking required. Well, then take a look at this parfait “recipe”
The foods you need to get (from your local grocery or convenience store) • The fresh fruit of your choice (some of my favorites are strawberries, blueberries, mangos, raspberries, and bananas) • A container of your favorite light (or sugar free) whipped topping. • One angle food cake ( you can usually get these pre cooked in the bakery, or if you have some extra time you can cook your own from a box mix. The procedure • Cut up your cake into small chunks, no more than 1 inch in diameter. You can do this with a kitchen knife, or simply by hand ripping the cake. (I have to tell you – the hand ripping is a lot more fun – just be sure to wash your hands before you do this) • If your fruit isn’t small (like the berries would be) then you need to cut it up into chucks, slice the strawberries or dice a larger fruit, such as the mangos. • Make sure that your whipped topping is thawed, and not frozen in the center (this sometimes happens when you get it right from the freezer case – 10 seconds on your microwaves lowest setting usually does the trick) • Grab your dishes, or if your looking to show off your treat, use tall and clear glasses. • Drop in some of the angel food cake, then some of the fruit and the whipped topping. Make the layers as thick or as thin as you want to. (I personally recommend going heavy on the fruit, and light on the cake) • Repeat as many times as needed to fill the vessel. The amount of servings you get will vary based on the size of your vessels and the thickness of your layers. • Cover with a plastic wrap and chill until time to serve.
