Practically Tropical
This is a recipe for chicken rubbed with fresh kiwi, served with garlic lentils. Also, I have put a twist on my favorite fried cabbage. It looks exciting and tastes great!!
Ingredients:
- 1 chicken breast, thawed
- 1 kiwi, very ripe
- 2 Tbs. oil
- salt
- 1/4 lentils
- 1 Tbs. butter
- Garlic salt
- pepper
- several leaves of cabbage
Directions:
- In a skillet, heat the oil over medium heat.
- Cut ends off kiwi. Peel off skin and discard.
- Cut out the core. Cut the kiwi into small pieces.
- In a bowl, mash kiwi. Add a pinch of salt.
- Liberally rub half of kiwi mixture onto the chicken breast.
- Put chicken into the pan.
- Cook for a few minutes, flip.
- Add the rest of the kiwi on top.
- Cook until done. **The kiwi will come off of the chicken, but the flavor surrounds it. When done, round up the kiwi bits and add them back to the chicken as a topping.**
- For lentils, cook according to package directions.
- During last ten minutes of cooking add butter and garlic salt.
- Here's the twist on the fried cabbage. Instead of cutting with a knife, roll cabbage leaves into cigar shapes and tear apart.
- Toss and cook the cabbage in the oil leftover from the chicken.

Well, I was a little worried, but it turned out OK. The kiwi got crispy. But it was still good and added sweetness.
