Youre hungry. There's next to nothing in the fridge. Youre tired of eating mac n cheese and Top Ramen. Ketchup sandwiches have lost their appeal. (BLEAH!) Sometimes you just need to get creative. If youre out of bread, no problem. Try this yummy snack that I make all the time. Everyone in my house loves it, even my 9 year old.

Grab a few flour tortillas. Throw in a few hefty pieces of deli pastrami. Add on top, a few pieces of pepper jack cheese. One or two slices is perfect. Next, throw a couple of spoonfuls of cream cheese on top. Drizzle a healthy amount of regular yellow mustard on your creation. Sounds weird but trust me. Now microwave it for 30 seconds. Roll it up and your ready to eat.



Green Bean Casserole

If your family is like mine, you usually have green bean casserole on Thanksgiving and Christmas. It's not just a holiday snack though, you can have it anytime of the year. And I do. It's really easy to throw together and it only takes about 5 minutes to get ready and 30 minutes to cook.

Here's what you need;

  • 2 cans of green beans-I prefer the french cut kind

  • 1 can cream of mushroom soup-small can

  • 1 can of milk-use the soup can to measure

  • french fried onions-I get the big can

  • salt and pepper

Just toss all of this together except for the french fried onions. Add only about 1/4 of the can to this mixture. After cooking at 350 for 25 minutes, add 1/2 of the can of french fried onions to the top and cook for 5-10 more minutes until theyre golden brown. Now eat. YUM!


Guacamole

When I was a kid I hated guacamole and anything to do with avacados. Now I cant get enough! My dad is a chef and he taught me a lot about cooking. Id love to give you his receipe but unfortunately, I dont know it. I do however, have my own very yummy one. It's a party pleaser and everyone will love it. Or you can just make it for yourself to eat.

Here's what you need:

  • 2 ripe avacados
  • 1 lemon or 1 lime
  • 1/2 cup shredded cheddar cheese
  • 2 or 3 tablespoons of mayonaise
  • 1/2 chopped red bell pepper (you can use green, I like red to give it color)
  • garlic salt to taste

Basically youre just going to mix all of this up and serve with chips. If you want to you can also heat it up for a minute or two in the microwave. Its really good hot.


Steak Chili Dip

Years ago while visiting my daughter's great grandparents, her mamaw made this and it's something I love to make (and eat) to this day. Youll need either a small to medium crockpot or a microwaveable dish. I prefer the crockpot because it keeps this warm for as long as you need it to be. Its another great snack for a party.

  • Stagg Steakhouse Chili
  • 1 can of olives, chopped
  • 5 green onions, chopped
  • 1 box cream cheese
  • Tortilla chips

Put chili, olives, green onions and cream cheese into the crockpot and turn on low heat. Stir. Serve with chips.

Little Weenie Dip

Another thing my daughter's grandmother made was a little weenie dip. Kids love it, adults love it, you cant really go wrong.

  • 1 bag of little weenies
  • 1 cup of ketchup
  • 1 cup of grape jelly

Put all of this into a crockpot and turn on low to medium heat. You can also use a medium sized pot and heat on the stove. After about 30 minutes it's ready to nibble on.

Nice recipes. I'm puzzled with one, however. For the Green Bean Casserole you use 1/4 of the onions and later on 1/2. What do you do with the remaining 1/4? :)

Fun stuff, Bettie. I've always made guacamole with sour cream. The mayo variation is interesting.
