Peach Ice Cream with Fresh Peaches

Ingredients:

  • 3 large peaches
  • 1 ½ cups (375 ml) whipping cream
  • 1 tbsp (15 ml) Grand Marnier (orange flavored Liqueur)
  • ½ cup (125 ml.) sugar
  • ¼ cup (60 ml) sugar syrup
  • 1 tbsp (15 ml) chopped pistachio nuts

Grand Marnier is an orange flavored liqueur produced for a blend of cognac, orange peel, spices and vanilla.

Procedure:

  1. Pour boiling water over 1 peach in a bowl. Let stand 1 minute. Drain. Plunge into cold water, then remove skin and pit. Mash to make ½ cup (125 ml).
  2. Combine peach pulp with cream, 2 tsp (10 ml) Grand Marnier and sugar in food processor. Blend until smooth and the sugar is dissolved. Pour into the container of an ice cream.
  3. Churn or freeze until of ice cream consistency. If a freezer tray is used, beat lightly halfway through freezing. Place plastic wrap over trays to prevent ice crystals forming.
  4. If an ice cream churn is used, remove ice cream from churn and store in a covered container in the freezer until required.
  5. An hour before serving, peel the remaining peaches (as described previously) and cut each into 8 slices. Place in a bowl. Marinate with sugar syrup and the remaining Grand Marnier. Cover to prevent fruit discoloring.
  6. Arrange the fruit slices in stem glasses. Place 2 scoops ice cream on top. Sprinkle with pistachio nuts.
  7. To make sugar syrup, boil for 2 to 3 minutes 1 part water to 2 part sugar.
