Spanish / Filipino Pork Stew

 

 

Perfect "Pochero" (Spanish / Filipino Pork Stew)

 

Ingredients:

Pork (washed, cubed)

2 pc big shallots (white onions; chopped)

¼ cup fish sauce

½ tbsp whole peppercorns

4 cups water

1 small pouch tomato sauce

Celery (stalks and leaves, chopped)

Corn kernels (reserve juice)

Salt and pepper (to taste)

Veggies:

Garbanzos (canned chick-peas, reserve juice)

Potatoes (cubed)

Carrots (cubed)

 

Directions:

  1. Boil pork with 1 cup water for 5 minutes. Discard water.
  2. Add the rest of the water, reserved veggie juices, fish sauce, shallots, and peppercorns. Cook until meat is tender.
  3. Add tomato sauce, celery and corn kernels. Simmer for 5 minutes.
  4. Add the remaining veggies and cook for 5 more minutes.
  5. Season with salt and pepper.
  6. Serve with flat bread and sausages.
