Spanish / Filipino Pork Stew
Perfect "Pochero" (Spanish / Filipino Pork Stew)
Ingredients:
Pork (washed, cubed)
2 pc big shallots (white onions; chopped)
¼ cup fish sauce
½ tbsp whole peppercorns
4 cups water
1 small pouch tomato sauce
Celery (stalks and leaves, chopped)
Corn kernels (reserve juice)
Salt and pepper (to taste)
Veggies:
Garbanzos (canned chick-peas, reserve juice)
Potatoes (cubed)
Carrots (cubed)
Directions:
- Boil pork with 1 cup water for 5 minutes. Discard water.
- Add the rest of the water, reserved veggie juices, fish sauce, shallots, and peppercorns. Cook until meat is tender.
- Add tomato sauce, celery and corn kernels. Simmer for 5 minutes.
- Add the remaining veggies and cook for 5 more minutes.
- Season with salt and pepper.
- Serve with flat bread and sausages.
