If you would like to know how to make this Classic Pumpkin Soup Recipe ,it is easy, and delicious. Extra pumpkin puree can be frozen and used later for bread , easy pumpkin muffins,cakes. Natural and nutritious pumpkin puree ,is perfect for baby's meals too.

Ingredients for Easy Pumpkin Soup

  1. I onion roughly chopped ( I did eighths) halves ,quarters then eighths
  2. 750 g pumpkin fresh or canned Pumpkin ( half of a large one or one small pumpkin)
  3. large potato ( or kumara) sweet potato
  4. salt ( 1 tsp)- I also added half a tsp of curry powder too, and sometimes experimented with one or two other spices)
  5. Nutmeg to sprinkle once served but I always forgot.
  6. Coconut milk generic variety worked just as well as any others, and takes the soup from plain to gourmet easy peasy.


How To Make The Best Pumpkin Soup

Method Peel and chop pumpkin (or canned) and potatoes into same size pieces ,smaller the pieces will reduce cooking time ,include onions ,spices ,salt etc. Boil time approx 20mins , just check for tenderness as you would boiling potatoes.

Drainand SAVE juice (stock). Set aside Mash using hand masher , food processor , or hand held mixer until pulpy and well mashed . You may need to do this in batches depending on chosen method.

In a separate sized pot add 100 grams of butter on medium heat to melt , as it melts quickly throw in 3 tablespoons of flour , as this turns into a paste add one cup of milk to make a sauce ( roux).

Watch the heat you may need to adjust down. The pumpkin stock that you had set aside now add to the white sauce ,blend in. Add pumpkin puree and coconut milk ( one can) Blend well. All thats required now is to heat through , eat and enjoy!

Just a wee tip here ,if you feel you have too much pumpkin puree , take some aside and freeze ( any plastic container ,if no freezer bags) Do this before adding the coconut milk or the sauce as anything with milk in it does not freeze well ( separates an goes funny).


Easy Thai Pumpkin Soup

Nothing could be easier than spicing up your already classic Pumpkin Soup with only one more ingredient.

Add one teaspoon of Spicy Thai Curry Paste, taste ,then add more according to how you like it ( I usually add anything from 1-3tsp) but it really does depend on the brand and strength etc.

Youre welcome candie, actually its probably more of a winter dish ,but my son emailed asking me for the reciepe (from NZ) so by the time I typed it all out ,I though gee I might as well make it a hub lol.

Pete , thanks for dropping by too , but if you dont like pumpkin ,maybe use just potato ( replace the herbs with something else) and leeks, soup is I think are like salads theres no mistakes lol

This would be a good hub for around Halloween and Thanksgiving as I am sure people are wondering what to do with their pumpkin feelings. Personally I hate cutting up a pumpkin and gutting it, and my sister annoyed me by keeping one in our house for seven months. She did not want me to cut it up and make something out of it, but by that point it became moldy. Next time around I might just make pumpkin soup with it first.

Thanks. Since beginning this change we have tried some new things. My husband and I tried Spaghtti Squash for the first time (I have a hub on the recipe that I made up) and we found that we like it. Sorry to hear about your wrist.

Cook the pumpkin with the skin on , an scoop out the pumpkin flesh once cooled down a little.

I hope that helps and you get well soon!

If cooking pumpkin from fresh state i.e not canned , then they will take around the same time as whole raw potatoes to cook (so long as proportions are kept even)
