Ingredients :

  • 10 fresh plums, pitted and finely chopped
  • ¼ cup (60 ml) dried apricots
  • soaked in warm water for 1 hour, chopped finely
  • 1 tsp (5 ml) chili pepper sauce
  • 1 tsp (5 ml) salt
  • 3 tbsp (45 ml) water
  • ½ cup (125 ml) sugar
  • ½ cup (125 ml) vinegar

Procedure :

  1. Place plums and apricots in a wok. Add chili pepper sauce, salt and water. Bring to a boil and simmer gently for 15 minutes. Add a little more water if the mixture becomes too dry.
  2. Stir in sugar and vinegar and simmer 20-30 minutes until the sauce reaches a chutney-like consistency. Pour sauce into a sterilized jar, cover and refrigerate when cool.
  3. Shelf life is for several months.

Makes about 1 cup (250 ml)
