How to make Pork Menudo


Pork Menudo is a favorite Filipino dish which can be served on a day-to-day meal or for gatherings or special occasions. This sounds like Spanish food but it's actually Filipino style. The food and its name were derived from Spanish due to Philippines was colonized by Spaniards for hundreds of years a long time ago.


Ingredients:

½ kilo pork, cut into small cubes
¼ kilo pork liver, cut into small cubes
2/3 cup garbanzos (white chickpeas, boiled and peeled)
2 potatoes, peeled and cut in small cubes then fried
2 medium size onions, diced
2 tomatoes, diced
1 small can tomato sauce
1 red bell pepper, diced
1 head of garlic, minced
1 tbsp soy sauce
3 tbsp cooking oil or olive oil
1 cup water or 1 cup pork or chicken stock
salt and pepper

Cooking directions:

In a pan or wok, saute garlic and onion. Add the pork, liver, tomatoes, bell pepper, soy sauce, tomato sauce, and water or stock. Cover and bring to a boil. Simmer for 20 minutes or until pork is tender. Add the garbanzos and potatoes. Boil for another 2 minutes. Add salt and pepper to taste.


Note:

You can also add carrots, raisins, and hotdog to add more flavor.

You can buy Knorr Menudo Mix if you prefer to just add ready-made seasoning mix instead of preparing the actual ingredients. This way, you save time and ensure that it will taste like real menudo.
