Tasty Chicken Pressure Cooker Soup Recipe
Chicken soup is not only for sick people! This tasty Pressure Cooker Soup Recipe will prove that.We are lovers of potatoes so I'll never make a soup without potatoes. Another important point is, the sweet potatoes should not be replaced with potatoes as it will really affect the taste of the soup. This recipe is a substantial soup and you can always dilute it with extra boiling water if you prefer a thinner kind of soup.
Ingredients:
- 1 Pound Chicken breasts, de-boned and without the skin
- 2 Chicken stock cubes (you can use real chicken stock if you have it)
- 6 Cups of water
- 2 Potatoes chopped
- 2 Sweet potatoes chopped
- 3 Garlic cloves, minced
- 2 Carrots chopped
- 8 Ounces of mushrooms chopped
- 1 Sweet pepper chopped
- 1 Onion chopped
- 2 Tablespoons of butter
- 1 Tablespoon of cream
Method:
- Fry the chicken breasts in the butter and set aside
- Fry the onion and the sweet pepper in the butter
- Add the chicken and all the other ingredients
- Bring the cooker to high and cook it for 20 minutes
- Allow the pressure to fall
- Adjust the salt to your taste
- Puree the soup with a hand blender
- Adjust the thickness of the soup with boiling water until it is the consistency you prefer, we like it very thick.
- Add the cream and serve
It is possible to serve this soup as a complete meal with crusty bread rolls or if you make a thinner soup it can be served as a starter.

Bean Pressure Cooker Soup Recipe
The next Pressure Cooker Soup Recipe is a tasty bean soup. This is a complete meal and can easily be served for dinner. I make it very thick, you can once again dilute it with boiling water if you prefer. You will not believe me, but we serve the leftovers the next day on rice and then we have a second meal from the same dish that is completely different!
Tasty Bean Soup With Bacon
This soup is a thick and nourishing soup and can be served as a complete meal on its own. You do not have to serve anything with except some tasty bread. Once again, the sweet potatoes in the soup makes all the difference so if at all possible do not substitute it with potatoes. In all honesty I have to admit that I do not always add the sweet potatoes as they are not always available. The soup will still be pretty good without it.
Ingredients:
- 8 Ounces of dry beans (haricot is the best but any will do)
- 8 Ounces of chopped bacon
- 1 Onion chopped
- 4 potatoes chopped
- 4 Sweet potatoes chopped
- ½ Cup frozen carrots
- ½ Cup frozen sweet corn
- ½ Cup frozen peas
- 1 Tablespoon oil
- 6 Cups of water
- 2 Stock cubes
- Salt and pepper to taste
Method:
- Soak the dry beans in hot water for about 3 hours
- Drain the beans and rinse clean
- Place the beans in the pressure cooker
- Add the water, nothing else
- Bring the pot to the highest pressure and cook for 30 minutes
- Test the beans if they are tender, they should be after 30 minutes
- Fry the onion and the bacon and add it to the pot
- Ad all the other ingredients
- Bring the pot to the highest pressure again and cook for 30 more minutes
- Bring the pressure down naturally
- Taste the soup and adjust the seasoning. Do not do this until now as you do not know how salty the stock cubes are.
- Do not blend this soup it has to be a chunky soup.
It is very important to remember that you never add salt to dry beans until they are tender. If you add the salt at the beginning of the cooking process the beans will never cook properly, they will remain hard.
This soup can also very easily be adapted to become a pea soup. Replace the bacon with ham and use split peas instead of the dry beans. As split peas cook a lot faster than beans the initial cooking does not have to be longer than 15 minutes. You still should not add any salt to the peas until they are tender.
When I make this soup I sometimes add more frozen peas to it as well and omit the carrots. Remember with soup there actually are no rules, use your imagination. A Pressure Cooker Soup Recipe is only a guide. Have fun and experiment!

Thanks for these recipes - I've always been worried about making soups as I really didn't know how to - but thanks to you it sounds simple - gonna make a whole batch to take to work for lunch next week - Ham and Peas sounds great - not sure about the ginger though - may just leave that out this time!
