Pumpkin Cheesecake

Well since the Holidays are closing in on us ...I have found a few recipes I enjoy and thought I might pass them on... it is fun to try new things...and Merry Christmas to All...:o) Hugs G-Ma
WHAT YOU WILL NEED : ( I use all organic ingredients)
3 packages cream cheese, softened (8 oz. ea.)
3/4 cup sugar
3/4 cup brown sugar, firmly packed
5 eggs
1/4 cup heavy cream
1 teas. ground cinnamon
1 teas. ground nutmeg ( I grind whole ones for more flavor)
1/4 teas. cloves (bought in bulk is much less costly)
1 can pumpkin (or freshly made) 16 oz.
CRUST : box of graham crackers (there are directions on the box..or you can buy one already to go)
TOPPING : 6 tblsp. butter or margarine
1 cup brown sugar, packed firmly
WHAT TO DO NEXT: Pre heat oven to 350 F. In a large bowl, mix together cream cheese and sugars. Add eggs one at a time, beating well after you add each egg. Beat until light and fluffy. Stir in the cream, spices and pumpkin. Pour into a springform pan. Bake for 1 hour. Make your crust and topping (combine butter and brown sugar) optional... whip cream is good too

yum...now this sounds like a cheesecake I could eat without sharing. Yes and I can just smell it now. Haven't seen you in awhile G-Ma and I miss you. Glad to pay you a visit and thanks for this heavenly recipe. :)

G-Ma: Sounds great. Every year, I look for my pumpkin SWIRL cheesecake recipe, and it takes me forever to find it. My family loves it and I couldn't find the exact right recipe this year so I improvised. It was close, but not quite there. Maybe I'll try this one -- without the swirling. Hugs!

If the cheesecake came out nice and firm, you could just place a serving on a regular graham cracker to serve it.

What a timely recipe. My daughter and I have been baking pumpkin cheesecakes for a few days now, modifying recipes for those who are gluten and sugar intolerant, and we've had big challenges on our hands. (No graham cracker crust, only almonds and sugar and butter, and no sugar, only splenda.)
I never thought of making a topping of whipped cream. I guess that would be something you'd add just before serving. Our topping is sour cream, whipped with sugar (or splenda) and then cooked onto the top of the cake.
Oh my. Time to go revisit the recipe.
