Turn off your oven and enjoy pumpkin pie!

Do you simply adore pumpkin pie? Does the aroma of those memorable spices leave you lost in time, reminscing about family gathered round the kitchen table laughing, talking, and leaning back in their chair, too stuffed to take another bite? Do you long for the smooth taste of pumpkin pie--but don't have the skill, time, or desire to bake one from scratch? Have you ever craved dessert for lunch? Boy, are you going to love me!

For those times you need a quick fix of pumpkin pie, how about trying something new. There's no rule set in stone that you have to fire up the oven, is there? Is it law that you have to scrape the filling of a real pumpkin and spend vast amounts of your precious time - sweating, no less - in the kitchen?

If you're all for pumpkin pie without the hard work, time, and exaustion, I have a recipe for you! It may not be grandma's or aunt Suzy Q's tasty version, but it'll do.

You don't need a lot of ingredients, a pie pan, or much time for this one.

You do need a bowl, spoon, pumpkin pie spice, a 7.5 oz greek yogurt, and a can of pumpkin.

Here's how to prepare your one bowl creation:

  • add a small (7.5 oz.) container of yogurt

  • with about 1/4 to 1/2 can of pumpkin (depending on your taste preference)
  • shake a few sprinkles of pumpkin pie spice
  • and stir

For extra flavor and crunch:

  • toss in some trail mix
  • sprinkle in some ground pecans
  • or enjoy with a gingersnap or two
  • raw pumpkin seeds are great too

This is an excellent way to have the flavor and texture of pumpkin pie--without all the hassle. And it's healthy for you too!

Thanks! I think you'll love it! You can add as little or as much pumpkin pie spice as you like. This is a great recipe for just customizing to your taste. :-)
