Quiche Lorraine


Anytime is Quiche Time!

Another way to get kids to eat eggs or veggies is to keep the pie theme going and serve up a yummy, basic quiche! Or, jazz it up your way, the eggs will take a wide variety of addtional ingredients.

I have grown to love quiche with fruit platters, hot drinks during winter, and cold juices in summer. My favorite fruit to accompany the quiche is watermelon, just because it's so sweet and juicy. However, mango and other fruit smoothies put the finishing touch to any quiche, anytime.

Resembling the Lorraine quiche, this recipe is sure to stick to your ribs!

Ingredients (Yield: 4 - 6 servings)

  • Cooked, crumbled bacon
  • 1 leek, with green tops, washed well and sliced thin
  • 1 tbsp unsalted butter
  • 3 eggs
  • 1 1/2 cups half cream
  • dash salt to taste
  • dash pepper to taste
  • 1 cup shredded Gruyere cheese
  • 1 1/2 tsp cornstarch
  • 1 roll of pre-packaged pastry dough, or pre-shaped shell

Procedure

  1. Preheat oven to hot 425F.
  2. Place refrigerated pastry dough into pie pan, or use your pre-shaped shell. Prick the bottom and sides of the pie dough with a fork to prevent bubbling up while baking. Press double thick foil into the pie shell, covering top and bottom but not forming a tent so the pie dough does not sweat. Bake for about 7 - 8 minutes. Remove the foil and bake until the pastry looks dry, but is NOT BROWN, no more than 3 - 4 minutes more. Remove from the oven and reduce the oven temperature to 325F.
  3. In a nonstick frying pan and over medium heat, brown the bacon and drain. Pour off the fat in the skillet and add the butter to the same pan. Melt it over medium heat, not letting it brown, and add the leak. Heat, stirring often, until the onions are tender. Set aside.
  4. In a bowl, beat the eggs until frothy. Stir in the cream, salt and pepper. In a seperate bowl, toss the cheese with the cornstarch. Add the cheese, bacon and leek to the egg mixture and stir gently, but mixing well. Pour into the pastry shell.
  5. Bake until a knife inserted into the middle comes out clean, about 35 minutes. If the edges of the pie shell are browning, take out and cover just the edges with a strip of foil. Continue baking until done.
  6. Cool for 15 minutes and cut into pie sections.

This warm quiche is sure to please family or company. Try the combination of different cheeses and meats such as cheddar cheese and sausage or canadian bacon.

This quiche sounds great. I'd have to omit the pepper but I love the idea of using leeks in it. I often would have some variety of onion or onionlike plant in quiche, which is one of my favorite foods if someone will fix it.

Hi robert....I hope you enjoy this, it's full of flavor and anything on a pastry crust is yummy to me...I've always said I could eat a skunk pie. LOL
