If you’re looking for a shortcut to making great vegetarian food at home, there are some great quick, easy recipes for vegetarian dishes that will take you ten minutes or less to make. They’re perfect when you’re stomach is growling and you feel like you’ll crazy if you don’t eat right away.

The first choice is a bean salad with walnuts and feta. Place the walnut pieces on a baking dish on toast for a few minutes until golden. While you’re waiting for the walnuts to bake, place some fresh beans that have already been soaked and cooked or a can of beans that have been rinsed on a plate. Sprinkle the beans with some minced red onion, diced avocado, and crumbled feta cheese. Drizzle the salad with some extra-virgin olive oil and vinegar, sprinkle with the toasted walnuts, and you have a wonderful salad that is ready to serve. 

Another great option—even at the end of the day—is a quick and easy breakfast burrito. Sautee a chopped onion in a little bit of butter or olive oil until it starts to get soft. Then either scramble some eggs or chop up some tofu—or both—depending on your taste. Add the tofu or eggs to the onions. Then add some chopped tomato, soy sauce, and herbs of your choice, and heat until warm. Then, stir in some chopped walnuts and some grated cheese. Quickly heat up a flour tortilla on a griddle, and then spoon the mixture into the middle of the tortilla. Fold and roll the tortilla to make your breakfast burrito. If you prefer, you can also add additional ingredients, included sliced bell peppers or diced potatoes to your burrito, as well.

A third option for quick, easy recipes for vegetarians is to make some fresh guacamole. All you have to do is cut two ripe avocados in half, remove the pit, and scoop out the flesh of the guacamole. Then, either mash the avocado by hand or use your food processor. Stir or mash in some minced onion, some finely chopped tomato, some fresh lime juice, and salt. Serve with a variety of tortilla chips for a great last-minute dish.

Another possibility if you really cannot wait for a bigger meal is to throw together a cucumber salad. In under five minutes, you can have a salad that, while it won’t completely fill you up, will take the edge off of your hunger. In your food processor, quickly slice or grate peeled cucumbers. Combine the sliced or grated cucumbers with some salt, pepper, and just enough olive oil so that the cucumbers are very lightly coated. Then, add a drizzle of lemon juice and some fresh dill or parsley to taste, and serve. This refreshing salad is not only quick and easy to make, but would also be a great side dish for a larger meal as well as being a healthy snack to tied you over when you’re starving.
