Salmon with watermelon and feta salad

Have you ever had dinner at a restaurant that you just can't stop thinking about? Two years ago, I went to a small diner with home-style cooking in Brooklyn and I ate a dish that made my mouth water every time it came to mind. It was a salmon dish served with a watermelon, feta cheese, and olive salad. The combo of the sweet watermelon and the salty olives and cheese was set off beautifully by a buttery salmon. Sadly, when I went to the restaurant several months later, I found out that my salmon dish had been a "dish of the week" and was no longer on the menu.

Recently, I've been cooking every night and I decided recently that I would try to make this meal on my own. It came out great. Here's the recipe I used....

Combine chopped watermelon (as much as you want) with one chopped red onion, fresh squeezed lime juice, kalamata olives, a few springs of fresh mint, and feta cheese. I never use fixed amounts on recipes, especially things like salads, I like to just as much food in as seems necessary.

Squeeze the juice of one lime over a fillet of salmon which has also been drizzled with just a touch of olive oil. Then wrap the salmon in tinfoil and cook it in the oven at 350 degrees for 20 minutes.

Voila! I had this salad/salmon dish last night in the 97 degree weather. It was so refreshing and cooling. Even my husband (he's a grumbler) liked it.

Sounds delightful, I'll try it the next time I cook salmon. I'm like you I don't really measure when I'm cooking.
