Green beans and potatoes-Indian way
60Green Beans and potatoes.
1/2. teaspoon turmeric powder
1/4 tsp red chilli pepper (may substitute black pepper)
1/2 teaspoon comin seeds
1/2 teaspoon corriander powder (optional)
1-2 teaspoons vegetable oil
1 large potato
1/2 pound fresh green beans 1 teaspoon shredded fresh ginger (optional)
Wash potato and green beans. Cut green beans into small approximately 1/2 a cm size pieces. It is OK if you like to cut it into 1 inch pieces. But somehow smaller cut tastes better. Peel the potato and cut it into small cubes.
In a non stick pot or wok with a cover, add 1-2 teaspoons of vegetable oil. When oil has heated a little, add cumin seeds. (If you are adding black pepper, then add it with the cumin seeds). Once the cumin seeds turn golden brown immediately add potatoes and green beans. Then add salt, red chili pepper, turmeric powder, ginger(optional) Stir to coat the vegetables with the ingredients and oil. Cook on slow heat for about 20 minutes. Stir occasionally. Once the potatoes are done, you can turn off the heat. Add coriander powder, stir it in the vegetable, and cover until ready to serve. May serve with rice or naan or Indian Roti.
Turmeric powder is a natural healer. It is powder made from a herb.
Ginger is also very healthy for joint, digestion etc.
