Im not one that is a fantastic cook although my family thinks I am. I cook the same things every week it gets kinda boring. Im getting older and watching sometimes what I eat. So about a year ago I started to try new and old family recipes. I love casseroles I love trying new ones and I wanted to share a few with you.


Easy Corned Beef and Cabbage Casserole

Ingredients:

5 medium potatoes, peeled & sliced thin 1 small onion, chopped

4 C. shredded cabbage 1 can corned beef, sliced

1 can cream of celery soup 1 1/2 C. milk

salt & pepper to taste

Layer potatoes, onion, salt & pepper, cabbage, and corned beef in two layers of each in large greased casserole. Mix soup and milk and pour over all. Bake at 375 degrees for 1 ½ hours or until potatoes & cabbage are soft. You can add more milk if it looks dry as it bakes.


Easy Breakfast Casserole

 
Ingredients:
 
  • 4 slices bread
  • 1 lb. bulk sausage
  • 1 cup grated cheddar
  • 6 eggs
  • 2 cups milk
  • 1 tsp. dry mustard (optional)

Tear up 4 slices of bread and place in a greased baking dish (9x13). Brown and drain 1 lb. bulk sausage meat and drain off fat. Spoon sausage over bread. Sprinkle with 1 cup grated cheddar cheese. Beat together 6 eggs, 2 cups milk, optional dry mustard and salt and pepper. Pour over mixture in baking dish. Bake in a preheated 350F oven for 35 to 40 minutes. The cheese will rise to the top.

Notes: You can make this the night before. Also you can add sliced tomato with a pinch of oregano for a dinner entree.
