Quick and Easy Mexican Lasagna

This is a recipe that I have use many times. In fact, most of our friends request it when they visit. It's really simple and easy so you can enjoy your company instead being stuck in the kitchen.

Mexican Lasagna

1 1/2 LBS GROUND BEEF

1 JAR SALSA

1 BAG NACHO CHEESE TORTILLA CHIPS

2 CUPS COTTAGE CHEESE

1 CUP SHREDDED FIESTA BLEND CHEESE

1 EGG

SHREDDED LETTUCE, CHOPPED TOMATOES

SLICED BLACK OLIVES , CHOPPED GREEN

ONIONS AND MORE SHREDDED CHEESE

BROWN AND DRAIN GROUND BEEF. Add SALSA.

COVER BOTTOM OF 13X9 PAN WITH CRUSHED CHIPS.

POUR MEAT MIXTURE OVER CHIPS. ADD ANOTHER LAYER

OF CHIPS. COMBINE COTTAGE CHEESE SHREDDED CHEESE

AND EGG. POUR OVER CHIPS. BAKE AT 350 DEGREES FOR

30 MINUTES. SPRINKLE REST OF INGREDIENTS ON TOP.

This recipe is very versatile, you could spice it up with some jalapenosor use ricotta cheese instead of cottage cheese or plain chips instead of nacho flavored. Garnish with sour cream and add a side of rice and you have a complete meal with hardly any effort at all.
