Summer is on its way, and with the onset of summer fun we don't want to spend all of our time in the kitchen. With higher gas and grocery prices we want good affordable food that is quick and easy.With little clean up. If you plan ahead you can save on groceries and have great meals at home. meals that you can serve to those unexpectant summertime quests.
First of all take advantage of the season. All the fresh vegetables and fruits that are available are perfect!!!! The fresh summer foods are usually priced low because they are in season.
Take zuccinni.They can be boats for pasta salad,chicken salad,crab salad or any salad you want to make or buy.(entree for lunch). Add some fresh fruit like watermelon wedges, seve with fresh sliced itallian bread or soft rolls.
Company for breakfast? How about a waffleberry shortcake. Take your average frozen waffle pop it in the toaster top it with fresh strawberries and whip cream.
need a great dinner recipe? marinate asparagus in a balsamic vinegerett, while thats marinating rub salmon portions with a cajun spice.wrap each salmon portion in aluminum foil.place on hot grill.Now take the asparagus and grill it until its tender. Turn salmon. make a salad or pasta salad to go with this. when salmon is done put on plate. put asparagus onthe side.serve w/ salad and roll.
another lunch idea. take boneless chicken breast (thawed) sprinkle with bacon bits, placeon aluminum foil, add a sweet barbq sauce fold the aluminum foil and place on grill or in oven. In the meantime slice yellow and zuccinni squash put in a baggie add brocolli as well and a dash of itallian dressing,fold baggie to close it. pop in microwave for about a minute or so. and you have a steamed vegetable medley. put your bbq chicken on plate add veggies and sprinkle grated cheddar across the top. its pretty. add rolls and melon slices.
omlettes? try this put 2 eggs, cheese, ham or sausage in a ziploc bag. squish together.zip close put in a pot of boiling water for 2 or 3 minutes. take out of pot. Open the zip lock bag and out comes your omlette(nopan to clean). serve with fresh fruit and raisen toast for a yummy treat.
left over raisen bread at home? make some great french toast!!!!
need a cool and refreshing breakfast. cut a cantalope in half. scoop out the seeds. fill the hole with cottage cheese, top with berries.
want something meatier for breakfast. put 4 eggs, a quarter cup of milk, ham cubes, browned sausage ,green peppers ,onions,, cheese salt and a dash of cayennepepper. beat all of the above together. spray a muffin pan with pam. pour into each 3/4 full pop in 425 oven. they are done when they dont jiggle.they are crustless quiche. serve with a grapefruit half and an toasted english muffin.
