Microwave Steamed Puddings In Under 10 Minutes

I've always loved a good steamed pudding. The simplest of these is Jam Steamed Pudding. But they do take hours to steam and sometimes you fancy a quick method to make a steamed pudding. So here's one recipe for you to try today

Ingredients

  • 28 grams/1oz margarine
  • 28 grams/1oz sugar
  • 1 egg, beaten
  • 56 grams/2oz self-raising flour
  • 2 tablespoons of syrup (or jam, or lemon curd)




Method:

  1. Place the jam in the bottom of a small microwave dish/basin - I always use a 1 pint Pyrex jug.
  2. Beat all the other ingredients together until they are smooth.
  3. Spoon the pudding mix over the jam.
  4. Cover the dish with a microwaveable lid or cling film (pierce it).
  5. Place in your microwave and cook on medium power for 2½ - 3 minutes.
  6. Leave to stand for 3 minutes before turning out into a bowl.

Top Tip:

When you've finished, just squirt a tiny amount of washing up liquid into the pyrex jug and fill it with boiing water.  By the time you've eaten your pudding, your jug will be ready for a 2 second wipe around and rinse and it's perfectly clean again!


Serving Suggestion

Serve immediately with custard.

Fillings for Your Steamed Sponge

Although this microwave steamed sponge pudding focussed mainly on using jam, you can really use any of your favourite teatime treats. Here are a few ideas:

  • Steamed Golden Syrup Pudding, place golden syrup in the bottom of the dish
  • Jam steamed sponge pudding: use any flavour jam you like, placed in the bottom of the dish
  • Lemon curd steamed pudding, placed in the bottom of the dish
  • Lemon curd and sultana pudding, you can layer these ingredients through your pudding
  • Chocolate steamed sponge pudding, simply add cocoa to the basic mix, a tablesopoon should be enough. You could also drop in some small pieces of chocolate to melt.

If it came out dense, then it means something needs slight adjustment. It could either be that there was a little too much flour, or it was cooked a little too long (microwave ovens vary in their wattage). What I like to do is to beat quite a lot of air into the mix before I put it in the microwave.

Give it another go, even if it comes out dense it's still cheaper and more instantly available than buying one from a supermarket - and you made it yourself, so you know what's in it.

When I cook something new with a microwave, I find I adjust it over the first 2-3 goes, just to suit my own tastes.

I love the way I can get an instant microwave suet pudding from this, just 3-4 minutes after fancying one.

OMG! I just made this with a sliced banana and two spoonfuls of caramel sauce. The three minutes waiting time was unbearable. I just about inhaled the pudding with some cold custard. Fab.

(it was Bonne Maman Caramel Jam, by the way - kind of like dolce de leche)

I just made another sponge tonight . . . thawed some roasted rhubarb I had hiding in the freezer. It was just to finish off the carton of custard, honest ;)

It's only been two days and you've already invented Banana & Caramel Sponge Pudding ... and now Roasted Rhubarb Sponge Pudding.

I was thinking of pear and chocolate sauce - but I'm not going to do it yet . . . worried just how habitforming this could become ;)

On the healthy eating note, I forgot to say that in the mix for my rhubarb sponge I replaced the margerine with half sunflour oil and half apple sauce - was still fine :)

I noticed microwave puddings in the local shop last night and deliberately checked the price/size. They are about 1/4 of the size and cost 80p each! This pudding (posh toppings excepted!) costs about 20p to put together,

Bargain! And you know what's in it.

I tried it with blueberries in the pudding mix, and a good dollop of maple syrup at the bottom of the cooking basin.

It's not bad - I used a recipe from the 'real' world. I think it might be best to cook the blueberries gently before adding them to the cooking mix.
