Quick and delicious recipe for Baked Chicken Teriyaki

As a stay-at-home mother of two, I am always challenging myself to use creativity to find a quick-fix recipe. The last thing I want to do is stand in the kitchen to prepare a two hour meal for the sake of elegance. Just like me, I am sure you want to spend more time with your kids and less time doing chores (like cooking) so I came up with this fast-fix recipe for baked chicken teriyaki style. It's simple and the outcome is a delicious, tender teriyaki chicken that will melt in your mouth. The shopping list is very short and preparation time is next to nothing.
Grocery items:
4 medium large to large boneless chicken breasts (I use Tyson)
1 jar of Kikkoman Teriyaki sauce (11.5 oz)
8 pinches of salt (optional or to taste)
4 pinches of black pepper (optional or to taste)
Other items needed:
1 casserole dish (around 10"x10")
1 sheet of aluminum foil to fit over casserole dish
Directions for preparation:
Preheat your conventional oven to 400 degrees.
Place defrosted chicken breasts in an oven casserole dish. Using a sharp knife or fork, stab several small sized holes throughout each piece. This ensures thorough cooking as well as consistent flavoring.
Sprinkle 2 pinches of salt onto each chicken breast.
Sprinkle 1 pinch of pepper onto each chicken breast as well.
Evenly arrange each piece of chicken in the casserole dish. Pour the entire bottle of teriyaki sauce over the chicken and throughout the dish.
Cover loosely with aluminum foil. YOU ARE FINISHED!
Place dish in oven for approximately 1 hour. Chicken is done when the juices run clear. To be on the safe side, you can cut a piece down through the middle and make sure there is no blood or pinkness.
The last 15 minutes before the chicken is done, I prepare my side items. Again, keeping it quick, I usually boil up a bag of Success Rice (about 10 minutes) and use the extra teriyaki sauce from the casserole dish to add some flavor. I also steam a bag of vegetables in the microwave, like Green Giant, which only takes about 5 minutes and also use some of the sauce to flavor my vegetables.
This recipe is fairly healthy and has been so handy to me that I use it at least once a week. Nothing is quicker if you want a truly tasty and fast meal, so enjoy!
