7 LAYER SALAD

This is a delicious quick and healthy dinner. You can change the items and make it your own. Its a great dish to take to a picnic or friends house. It is better to make it the night before which is nice because you come home and suppers ready!

You will need a large bowl,

6 cups of lettuce chopped

1 cup diced tomatoes

1 cup chopped celery

1 cup chopped red onion

1 cup cooked chicken cubed

10 oz package frozen peas(must be frozen)

Layer these in a bowl in order above.

Spread 2 cups Miracle Whip dressing on top and make sure it is all sealed right to the edge of the bowl.

Refrigerate for several hours or overnight. When you are ready to serve add 1 cup grated cheddar cheese on top and 1 cup crumbled cooked bacon.

You can change the ingredients some people like fresh mushrooms or green pepper in it, this is our favorite way. Have fun with it.

Great with some fresh bread. Dig in way to the bottom to get everything and enjoy.

7 LAYER TACO SALAD

This is another great quick meal to make and also can be healthy, nice for a summer meal.

You will need a large bowl.

6 cups chopped or shredded lettuce

1 cup chopped tomatoes

1 cup chopped green onions

1 cup avacado cut into cubes

1 cup cubed cooked chicken

1 cup salsa

Layer above in a large bowl.

Mix together 1/2 cup mayonnaise,1/2 cup ranch dressing, 1 cup sour cream and add 1 tsp. chili powder and a drop or 2 of red pepper sauce. Spread over the salad all the way to the edge. Refrigerate until ready to serve. This can be served right away or refrigerated for a few hours.

When you are ready to serve sprinkle 1 cup shredded cheddar cheese and 1 cup sliced black olives to the top.

Enjoy with fresh bread or warm tortillas or chips.

I love it, sounds so good right now. Question, it is almost impossible to get my meat and potato hubby to eat veggies, do you have that problem? I sneak veggies into anything I can but I'm always looking for new ideas.
