RECIPES FOR BUSY PEOPLE: CHICKEN KABOBS

THESE ARE GREAT IN THE SUMMER OR ANY TIME , THEY DO WELL ON THE GRILL OR UNDER THE BROILER.
Serves 4
1lb chicken cut up into evenly sized chunks, 1 green pepper, 1 red or yellow pepper, 1 onion all cut into bite sized pieces( make sure the pieces are pretty even so that nothing is sticking out too much and gets burned) and 20 fresh mushrooms 1 can pineapple chunks, drain and reserve the juice.
You will need wooden (or other type) skewers. I find them at the dollar store, a large bag of wooden for a buck.
I like to start and end with green pepper because it stays pretty firm and it is easier to push the food off the kabob. Starting with green pepper, place on skewers in any order you like, green pepper, onion, mushroom, chicken, pineapple and then again until each skewer is filled. This should make about 10, 2 for each and a few extra. If I have extra veg leftover I make skewers of just veg and fruit. Set aside.

SAUCE
Take the reserved pineapple juice, add 1/4 cup brown sugar, 3 TBSP soy sauce and 1 TBSP hoisin sauce or a drop of red pepper sauce. Mix all together and bring to a boil in a small sauce pan, stirring constantly. After boiling, let it simmer for 5 minutes and then brush over the kabobs.
They can be put under the broiler or on the grill. Keep basting them, the wooden skewers do get black and sometimes even flare up so you have to keep an eye on them. Cook until the chicken is cooked through and the veggies are nice and browned, turning as needed.While cooking BASTE BASTE BASTE! It takes about 15 or 20 minutes to cook through but make sure the chicken is cooked. I always make myself an extra kabob for testing the meat.
It is important to have everything cut uniformly sized so it cooks evenly.
I like to serve this over a bed of rice. Sometimes they can be a little tricky to get off the skewer so I spray them first with a non-stick cooking spray and just use a fork to guide them off. These are so easy to make and can be fun with kids to assemble. Everything can be prepared the night before and when you get home just put them together and cook.
This cries out for a dessert of fresh melon and a scoop of vanilla ice cream.
