STUFFED MEXICAN TURKEY BURGERS
This recipe will serve 4
BURGERS
1-1/2 lbs ground turkey meat
1 cup dry bread crumbs
1/2 cup salsa
1/2 tsp. salt
1/2 tsp onion powder
1/2 tsp garlic powder
2 tsp chili powder
1 tsp ground cumin
Mix above together well and form into 8 patties. In the center of 4 of the patties add 1 TBSP salsa and 2 TBSP grated cheddarjack cheese(you can also use pepperjack for a little more spice). Take the remaining patties and set on top and make sure you pinch all around the edges of each patty to completely seal in the salsa and cheese.
You can either broil or grill them at this point until they are done or you can prepare them early in the day and refrigerate until you are ready to cook them.
ONION STRAWS
I like to top them with onion straws
1 onion sliced very thin and separated into rings
1-1/3 cups flour
1 cup water
1/2 tsp salt
3/4 tsp red pepper or chili powder
Mix all together well and drop the onions in the batter until they are all coated.
I don't have a deep fryer so I put 1 cup cooking oil in a skillet on top of the stove and heat until very hot, stay with it, when it is hot start dropping the onions in the oil. You may have to add cooking oil after a bit, I add 1/2 cup at a time. I use a fork and try to separate them, until the skillet has a layer of them. Let them cook on one side for a few minutes and then turn them over until they are nice and golden brown. Put them on a paper towel to drain them and then continue until all the onions are cooked.
SERVING THE BURGERS
I like to lightly toast some hamburger buns and then add the burger and some onion straws and then top it. The cheese and salsa are inside so I don't add anything else on top. I do have extra salsa out in case my family wants to add it.
They are delicious. The onion straws do take a bit of extra time but they are worth it, and you can top it anyway you like. Fried onions work well also.
