"REDNECK" Chicken & Rice Bake

I remember eating this dish A LOT growing up. It’s quick and easy and requires very little prep work. We always loved it.

Ingredients:

1 Can (10 ¾ oz) condensed cream of mushroom soup

1 1/3 C water

¾ C uncooked regular white rice

¼ tsp paprika

4 skinless, boneless chicken breast halves


Directions:

Preheat oven to 375°. In a 12x9-in baking pan add soup, water, rice and paprika. Mix well. Place chicken on top of rice mixture. Sprinkle with additional paprika. Cover with foil.


Bake at 375° for 45 min or until chicken and rice are done.

Tip: All though the flavor is better with cream of mushroom, in a pinch you can also use cream of chicken soup. Also if you wish to use chicken that is NOT boneless keep in mind the cooking time will need to be increased. Typically your chicken should be at least 180 degrees to be considered cooked fully and safely, but don't over cook it, or it will be to dry.
