"Redneck" Mini Pizzas

My family made these a lot when we were kids; they’re inexpensive, versatile and will satisfy the pickiest of eaters since they can make them their way. It’s also a fun way to teach cooking skills to your children.

Ingredients:

1 small can of tomato sauce

½ tsp oregano

¼ tsp basil

¼ tsp garlic powder

1 can of regular biscuits (not the buttermilk or flaky kind)

1 lb of ground beef or ground turkey OR

1 package of hot dogs (sliced in bite size pieces) OR

1 package of Canadian bacon or pepperoni

2-3 cups of favorite shredded cheese

1 small can of sliced olives (optional)

1 small can of sliced mushrooms or a few fresh mushrooms (optional)


Directions:

If using ground beef or turkey, brown until cooked thoroughly, drain any grease than set aside. For the sauce, mix together in a small bowl, tomato sauce, oregano, basil & garlic. Set aside. On a flat surface roll out the biscuits to about ¼ inch thick. Place the biscuits on a greased cookie sheet about 2-3 inches apart. Spoon out the desired amount of tomato sauce onto each “pizza”. Next place a spoonful of the meat of your choice, than olives, mushrooms. Lastly sprinkle shredded cheese on each pizza. When finished place the cookie sheet in preheated oven for 350° for about 10-20 minutes. Until biscuits are no longer doughy. Check on them every five minutes to prevent burning. Allow to cool before removing from sheet. Enjoy!
