"REDNECK" No Bake Cookies

These are perfect to make on a hot summer day when you're craving cookies but dont want to heat up the oven.

I made these a lot growing up. It’s a no fuss, no frills recipe and relatively inexpensive to make. I like this recipe because it doesn’t call for peanut butter like most do and I think they taste better. It's easy enough to let the kids help you with, under supervision of course.

The best part of all very little clean up! 

Ingredients:

2 C sugar

3 Tbsp. cocoa

1 C butter

½ C milk

3 C quick oats

Dash of salt

1 tsp vanilla

1 C coconut

Directions:

Bring to a boil sugar, cocoa, butter and milk. Boil on high for 2 ½ minutes.

Stir in oatmeal, salt, vanilla, and coconut. Drop from spoon onto waxed paper. Let set until cool.
