"REDNECK" Potato Salad for a Crowd

Ingredients:

(1) 5 lb bag of RED potatoes

16 oz (approx) Miracle Whip Salad Dressing or Mayo (I prefer Miracle Whip,less fat)

1/2 lb block of cheese (cheddar,monterey or colby) cut into small cubes

1 tsp (add to taste) dill weed fresh or dried (less if fresh)

6 oz (approx) relish (dill or sweet) about 1/2 to 3/4 of small jar

6 hard boiled eggs diced

1/2 tsp paprika (a few dashes really)

1 tsp yellow mustard (optional not everyone likes mustard and I don't like to overdo it myself just enough for a little flavor)

Directions:

To steam cook potatoes place steamer in bottom of large pot, add enough water till it starts to come up through bottom of steamer. You may need to add more water if you are cooking a lot of potatoes to keep from burning. Keep an eye on potatoes every so often while steaming to prevent burning. Takes approximately 15-40 minutes to cook. Depending on how pressed for time you are you can either dice up the potatoes while raw than cook in steamer OR place whole potatoes in steamer to cook than wait for them to cool before dicing. I think it's a little less messier to dice them while still raw. I also like to leave the skins on for extra flavor and nutrition which is why I prefer red potatoes as their skins taste best. You can also cook the eggs and potatoes the night before than keep in fridge overnight so they are nice and cold before mixing ingredients.

Once potatoes & eggs are cool mix together with the following:

Miracle whip, cheese, dill weed, relish and mustard (optional). Once all ingredients are mixed thoroughly add dash of paprika for color & extra flavor. Let sit in fridge for at least an hour to set. Longer if potatoes & eggs need cooling.
