Rachel Ray: Carbonara recipe! YUMMY!!!

I don't get much of a chance these days to watch food channels but when I do one person I like to watch is Rachel Ray. Man, that girl can cook! I was watching her show recently and she was preparing a carbonara main dish and I went out and bought the ingredients the next day and WOW!!!!! everyone at my house loves it and when I prepare it for guests I have had no complaints.

Ingredients you will need:

1 small package smoked, peppered bacon

16 oz pasta ( I like to use rotini, linguini or ziti)

1 whole red onion

1/2 green pepper

1/2 red pepper

1 can fire roasted tomatoes

3 TBS minced garlic

1/4 c beef broth

4 TBS olive oil

Pour olive oil in a large skillet. Put skillet on medium heat. Put water on to boil and cook pasta as usual. Cut bacon in half and then lengthwise and then into small pcs widthwise. You want to end up with approx. 1" squares of bacon. Don't worry about them clumping together when you first put the bacon pcs in the pan because they will pull apart when fully cooked. Add bacon to skillet and fully cook (should take about 15 mins or so). Cut up onion, green & red pepper and add to skillet. Add fire roasted tomatoes, minced garlic and beef broth to skillet. Cook for an additional 20 minutes or so. Pour pasta into a large bowl and add cooked items from skillet and stir with a large serving spoon. You really don't need to add salt because of the bacon flavor but I do recommend sprinkling parmesean cheese on top and ENJOY!!!!!
