Raw Cauliflower Couscous Salad

Coucous is a grain dish that a lot of people enjoy before starting a raw food diet. This recipe gives you the awesome texture of couscous, but in a raw version that is very low in calories!

Raw Cauliflower Couscous Salad

  • 1 head cauliflower
  • 8-15 cherry or grape tomatoes, halved
  • favorite herbs, chopped, to taste (mint, basil, or cilantro are great)
  • 1/4 cup chopped red or green onion
  • 1/2 - 1 jalapeno, minced, if desired
  • juice or 2 lemons or limes
  • celtic sea salt, if desired

Cut as much of the head of the cauliflower off the stalks as possible, discarding as much of the stalks as you can, or saving them to snack on later. Process the cauliflower in a food processor by pulsing SLOWLY. If you overprocess it, it won't have the right texture and will be mushy! The texture should be relatively fine, but still fluffy, like a very fine rice.

Mix in the remaining ingredients and chill for 1-3 hours to blend the flavors. You can eat it right away, but it tastes MUCH better if you let the flavors blend first!

She's right! The book has a ton of information about why raw food is such a fantastic lifestyle, how to stick to it, and some amazing recipes. I'm really glad I picked up a copy.

Raw Burritos or Tacos

If you're like me, you probably miss Mexican food when you're on the raw food diet. A lot of people do have a hard time when they're missing their favorite cooked foods. I made up this recipe because I was really craving Taco Bell burritos. I have always preferred my burritos meatless or with chicken, so I don't bother trying to make a meat substitute with nuts or anything. I just use veggies!

Raw Tacos or Burritos

  • lettuce leaves, butter or romain preferred
  • shredded carrots (looks like cheese!)
  • cauliflower (processed as for the couscous above)
  • raw salsa (below)
  • raw taco sauce (below)

Fill a lettuce leaf with the processed cauliflower and shredded carrots. Top with salsa and taco sauce. Roll or fold and eat!

Raw Salsa (or pico de gallo)

  • 2 tomatoes, chopped
  • 1/4 cup chopped cilantro
  • 1/4 small onion, chopped
  • 1 small jalapeno, minced
  • lemon or lime juice, to taste
  • celtic sea salt to taste, if desired

Just mix all ingredients, chill 1-3 hours to blend flavors, and enjoy!

Raw Taco Sauce

  • 1/4 cup water
  • 1/4 vinegar, if desired
  • 2 tbsp. chili powder
  • celtic sea salt to taste, if desired

Blend all ingredients well and enjoy!

Green Lemonade

Green lemonade is a fantastic, refreshing drink. It's extremely healthy, and great for detoxing. Not only will this help you detox, but it tastes great and contains a ridiculous amount of healthy vitamins and minerals!

Raw Green Lemonade

  • 1/2 gallon water
  • 6-12 lemons, freshly squeezed
  • 1-2 cups fresh green juice (juice kale, collar greens, spinach, or other greens)
  • raw agave nectar, to taste

Blend all ingredients and chill, or serve over ice!
