Raw vegetable cold soup

Delicious.

Ingredients: Use any combination of any of the Salad vegetables listed below.

  1. Cucumbers.
  2. Tomatoes.
  3. Broccoli
  4. Celery.
  5. Brussels Sprout.
  6. Water Spinach.
  7. Carrots.
  8. Beet.
  9. Radish.
  10. Any Salad Vegetable you can think of.
  11. Unflavored Yogurt.
  12. Pepper.
  13. Salt.
  14. Citrus juice.

The only rule is in the vegetable processing. If you want a chewy soup, Dice tomatoes, shred greens and tubers, other wise chuck everything into a blender, add yogurt, citrus juice, salt and pepper to taste and churn. Add water to get the required consistency and then, what else? Eat your way to health. Taste will vary according to the vegetable combinations. Personally I prefer to chew on chunks of vegetable. That way I can enjoy taste of each vegetable. I also like yogurt to be watered down considerably. Lesser the water ths soup will resemble a salad. Hope you like this recipe.
